Ingredients
1 1/2 cup flour
3/4 cup cornmeal
2/3 cup sugar
5 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
1 egg
1 cup milk
1 teaspoon vanilla
Preparation
Preheat oven to 400. Grease muffin tin.
Combine flour, cornmeal, sugar, baking powder, and salt. In a separate bowl, melt butter, cool, then add egg, milk, and vanilla. Pour wet ingredients into the dry ingredients, stir until just blended.
Put batter in muffin tin. Bake 15-18 minutes or until golden brown.
