Ingredients

2 cups self raising flour

3/4 cup white sugar

1/4 cup melted butter

1/4 cup vegetable oil

1 cup buttermilk (or 3/4 cup yoghurt and 1/4 cup milk)

2 eggs

2 cups fruit

Preparation

Preheat the oven to 200 degrees C.

Grease a 12 cup muffin pan, or line with paper muffin cups.

Mix dry ingredients.

Mix wet ingredients.

Mix wet ingredients into dry until just combined. I use a butter knife.

Mix through fruit.

Spoon into the prepared muffin cups.

Bake for 15 minutes, or until the top springs back when lightly pressed.

Cool in the pan over a wire rack.
