Ingredients

5T Olive Oil

2Lg Vidalia or 3 Red Onions - peeled and sliced

8oz Dried Figs - Chopped

2 Garlic Cloves - Peeled/Crushed

4oz Red Wine

2T Balsamic Vinegar

1t sugar

4T Rosemary - finely chopped

1 load French Bread sliced 1/3" slices

6oz goat cheese

Preparation

Heat 2T Olive Oil in large pan. Add Onions; cook over med heat until soft and golden. Stir in Figs and Garlic; add Red Wine and Vinegar. Simmer covered, for 10 minutes or until most of liquid has evaporated. Stir in sugar and 1/2 of the Rosemary. Season well. Cool and set aside. Place French Bread slices on baking sheet in single layer. Drizzle with remaining oil. Bake 6-8 min until bread is golden and crisp. Cool slightly. Thinly slice Cheese. Top bread slices with Fig/Onion mixture. Top with Cheese. Season with pepper. Scatter remaining Rosemary over top. Bake 5 minutes until cheese melts.
