Ingredients
1/4 cup olive oil
3 red bell peppers, chopppe coarsley
3 yellow bell peppers, chopped
10 large garlic cloves, peeled & cut in half lengethwise
1/4 cup lemon juice
4 tsp. sugar
3-4 tbsp. bruissed fresh rosemary
dried red pepper flakes to taste
4 tbsl\p. sun dried tomatoes, finely chopped
Preparation
Heat the oil in a large saucepan. Saute the pepppers and garlic in oil over med. heat for 15 min. Do not brown.Add lemon juice,sugar, rosemary, pepper flakes and continue cooking for 15 min. stirring frequently. Stir in the tomatoes and cook for additional 10 min. Season to taste with salt. Serve at room temp. May be made in advance. Great served with lamb or beef.
