Ingredients
29-oz can of sweet potatoes (mashed)
3 T butter (melted)
1/4 c brown sugar
1 t cinnamon
1 bag marshmallows
3 C cornflakes (crushed)
8-3/4 oz can pineapple chunks
small jar maraschino cherries
toothpicks
Preparation
In large bowl combine mashed sweet potatoes, melted butter, brown sugar and cinnamon. Stir until well blended. Put 1 T. of mixture into your hand, pat into a circle. In the circle put 1 marshmallow, roll potato mixture around the marshmallow to form a ball. Continue until all sweet potato mixture has been used. Roll all the sweet potato balls in the crushed corn flakes. Place in a greased baking sheet. Top each with a pineapple chunk and a maraschino cherry with a toothpick. Bake just before serving in a 350 degree over, 15-18 minutes or until the marshmallow is melted
