Ingredients

12 sweet potatoes

2 sticks margarine

1 small can drained crushed pineapple

1/4 cup white sugar

1/4 cup brown sugar

1/4 cup honey

3 Tbsps orange juice

dash salt

1 bag of small marshmallows

Preparation

  1. Boil 12 sweet potatoes, peeled.
  2. Once soft, whip in mixer while potatoes are hot.
  3. Add 2 sticks margarine, 1 small can drained pineapple (crushed), 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 cup honey, 3 Tbsps orange juice, dash salt – all while blending on low speed.
  4. Pour potato mix into pan and bake at 350 degrees until heated thoroughly.
  5. Remove while hot and add layer of marshmallows. Return to broiler a few minutes until marshmallows are melted and brown. (Can freeze casserole and add marshmallows later.)
