Ingredients

6 roasted sweet potatoes

oil

salt and pepper to taste

maple syrup to taste

2 eggs

1/2# butter

cinnamon

1/2 c. heavy cream

Preparation

Oil the potatoes and roast in the oven until very soft throughout. Once cooked enough that you can touch them, peel off the skin and set in a bowl. With a large whip, mash the potatoes, add the butter and remaining ingredients. Place in casserole and bake at 350 for 10 minutes.
