Ingredients
1 large can sweet potatoes (28-29 oz)
2 eggs
1 teaspoon vanilla
dash of salt
1/2 cup sugar
1/2 cup butter (or margarine)
1/2 cup milk
Topping:
1/3 cup melted butter (or margarine)
1 cup light brown sugar
1/2 cup flour
1 cup chopped pecans
Preparation
Preheat over the 350 degrees.
Drain the can of potatoes and place into a large mixing bowl. Mix in the remainder of the ingredients and mix with a beater until thoroughly mixed (the butter will not blend completely). Spread evenly in a 13" x 9" casserole dish.
Topping: Mix all of the dry ingredients in a medium mixing bowl. Melt the butter and mix in until fully blended. Spread evenly over the potatoes.
Bake at 350 degrees for 25 minutes, or until the top is melted and lightly bubbling.
