Ingredients
2-1/2 to 3-1/2 cups of cooked and mashed sweet potatoes
1/4 cup melted butter
2 tablespoons and 2 teaspoons milk
1/4 cup white sugar
1/4 teaspoon vanilla
1 egg, beaten
1/2 cup light brown sugar
1/4 cup all-purpose flour
3 tablespoons butter
1/2 cup chopped pecans
Preparation
Pre-heat oven to 350 degrees. Grease a 9 x 13 inch baking dish.
In a large bowl, mix together mashed sweet potatoes, 1/4 cup of melted butter, milk, sugar, vanilla, and egg. Spread mixture into the baking dish.
In a small bowl, mix tgogether brown sugar and flour. Cut in 3 tablespoons of butter until mixture is crumbly, then stir in pecans. Sprinkle mixture over sweet potatoes.
Bake for 25 minutes in the oven until golden brown.
