Ingredients

2 eggs

1/2 cup sugar

1/2 tsp. salt

1/2 cup butter softened

1/2 cup milk

1/2 tsp. vanilla

3 cups canned sweet potatoes (equal to one 40 oz. can drained)

Topping:

2/3 cup brown sugar

1 cup chopped pecans

1/3 cup flour

1/3 cup butter

Preparation

Preheat oven to 350 degrees. This recipe goes together easily with a stand mixer.

Beat eggs in stand mixer bowl or other large bowl.

Add sugar, salt, butter, milk and vanilla. Mix well.

Add sweet potatoes and mix until only small pieces are visible. You want them to be lumpy.

Pour mixture into a 9 x 13 baking dish.

In another bowl, stir together the topping ingredients. Spoon on top of the sweet potatoes.

Bake at 350 for 30 minutes.
