Ingredients

3 medium sweet potatoes cubed small

1 can diced tomatoes

1 can black beans

1 can red beans

cajun seasoning blend

olive oil

Preparation

In a large wok or skillet sauté sweet potatoes seasoned with cajun seasoning till tender.

Drain both cans of beans and tomatoes and add to hot potatoes. Stir to blend then transfer to casserole dish with cover.

Bake in oven at 350 for 35 minutes.
