Ingredients
6 Large sweet potatoes
6 tablespoons brown sugar
2 eggs, beaten
1/4 cup orange juice
2 tablespoons unsalted butter
2 tablespoons vanilla extract
1/2 teaspoon salt
TOPPING:
3 tablespoons unsalted butter,softened
1/2 cup brown sugar
1 1/2 cups chopped pecans
Preparation
Preheat oven to 400 degrees. Wash potatoes. Prick them several times with a fork. Wrap them in aluminum foil. Bake for 1 hour. Let them cool off. You will be handling them so do this step way ahead of time.
Once they have cooled….
Preheat oven to 300 degrees. Remove the skins from the potatoes. You should be able to peel it right off. Mash the potatoes with a mixer.
Add all remaining ingredients (EXCEPT TOPPING) and beat until smooth.
Put in a Large round Pyrex baking dish.
Mix the topping ingredients in a seperate bowl.
Sprinkle the topping ingredients on top of the potatoes.
Bake in oven 30 minutes.
