Ingredients
2 1/2 pounds sweet potatoes
1/3 cup butter, melted
2 eggs, beaten
1/2 cup orange juice
1 teaspoon vanilla
1/2 cup sugar
Topping:
1/2 cup chopped pecans
1/2 cup shredded coconut
1/2 cup packed brown sugar
3 tablespoon butter, melted
Preparation
Preheat oven to 375. Lightly grease a 1 1/2 quart casserole dish.
Peel sweet potatoes, boil them until tender, then drain and mash. Add 1/3 cup melted butter, eggs, orange juice, vanilla, and 1/2 cup sugar. Mix well, and spread into dish. Combine coconut, pecans, and brown sugar, then sprinkle on top of potato mixture. Drizzle with 3 tablespoons melted butter. Bake for 25 minutes.
