Ingredients
3lbs Sweet potato or yams
2lbs Idaho potato
1/2 qt heavy whipping cream
a sprig of thyme
Goat cheese (crumbled)
salt and pepper to taste
Parmesan to top
Preparation
Pre- heat oven to 300 degrees
- Peel sweet and Idaho potatoes and cut horizontally a 4th of an inch using a knife of a mandolin. 2.In a bowl combine cream and thyme leaves
- Layer Idaho potato on a casserole dish followed by a layer of sweet potato. Pour cream and thyme mixture to cover one layer then sprinkle crumbled goat cheese on top. Layer the rest of the potatoes following the same procedure.
- Sprinkle some Parmesan cheese and goat cheese if desired on top of the final layer. Make sure that there’s enough cream to cover the rest of the potatoes.
- Wrap in Foil and Bake in oven until potatoes are tender. Brown the top using a broiler if desired for crunchiness.
