Ingredients
For the Sweet Potatoes
4 medium sized sweet potatoes (diced)
Juice of 2 oranges
1/2 honey
1/2 sweet onion (diced)
Cummin, nutmeg, salt and pepper to taste
For the Beets
8 oz. diced beets
8 oz. crazins
1/3 bourbon
1/2 red wine
1/2 c. chopped peacans
Preparation
Coat Sweet Potatoes with small amount of olive oil and roast for 12 min. @ 400 F. Set aside
Coat Beets with small amount of olive oil and roast for 20 minutes at 400 F. Set aside
Combine Crazins/Bourbon and Red Wine in small sauce pan and reduce mixture to 1/3. Set aside.
Roast peacans for 7 min. @ 350F. Set aside.
In a small bowl combine orange juice and honey. Set aside.
In a large olive oil coated skillet, brown onion.
Add sweet potaotes and orange/honey mixture. Cook until slightly browned.
Add beets, pecans and Crazins. Cook until warmed through (about 4 min.)
Serve with Steak or Pork Chops
