Ingredients
2 medium sweet potatoes
1/2 large yellow onion
1 package (12 - 16 oz) of sweet Italian turkey sausage
1 tbsp olive oil
1/2 tsp of rosemary
dash of salt and pepper
Preparation
- Start a medium pot of boiling water.
- Dice the yellow onion and cut the sweet potatoes into small cubes.
- Remove the sausage from any casing and place it in a skillet with the olive oil.
- Cook the sausage over medium heat for approximately 6 minutes or until it starts to brown.
- Add the sweet potatoes to the pot of boiling water and boil for 6 - 8 minutes.
- Add the diced onion to the sausage in your skillet and cook on medium heat for 6 - 8 more minutes or until the onion starts to caramelize.
- Drain the sweet potatoes and add them to the sausage and onion mix in the skillet.
- Add in the rosemary, salt, and pepper.
- Let cook over medium heat for 10 more minutes, stirring throughout.
- Let slightly cool and serve.
