Ingredients
1 lb sweet potatoes cut in 1 inch pieces
1 19.5 ox garbanzo beans drained and rinsed
1/4 c. fresh lemon juice
1/4 c. tahini
2 T olive oil
2 t. ground cumin
1 garlic clove chopped
Coarse salt and pepper
Whole-wheat pita and crudites such as red pepper and broccoli
Preparation
Steam sweet potatoes until tender; transfer to food processor.
Combine all other ingredients. Can store in airtight container, up to one week. Freezing works too!
