Ingredients

1 cup oil

2/3 cup water

4 eggs

2 cups mashed, cooked and peeled sweet potatoes or (canned) pumpkin

3 1/3 cups flour

1 ½ tsp. salt

2 tsp. nutmeg

1 tsp. cloves

1 tsp. allspice

2 tsp. soda

1 tsp. cinnamon

3 cups sugar

1 ½ cups raisins (optional)

½ cup chopped nuts

Preparation

Preheat oven to 350 degrees. Mix oil, water, eggs and pumpkin. Add remaining ingredients. Pour into 2 large, or 3 medium, greased and floured loaf pans. (I also made in it a 9 x 11 pan). Check with a toothpick after 45 minutes - could take up to an hour.

Freezes well.
