Ingredients

1 Unbaked pie shell

1 pound of sweet potatoes (about 3 medium-size sweet potatoes)

2 large eggs

1 cup sugar

1/8 tsp nutneg

2 tbl spooon flour

1/2 cup milk, plus 2 tbl spoon

9 tablespoons of melted butter or margarine

3 tbl spoon white corn syrup

1/4 tsp vanilla

Preparation

Bake, boil, or microwave sweet potatoes until done all way through. Peel off skin and let cool. Place sweet potato in a mixing bowl and beat until smooth. Add eggs and beat until smooth. Mix all dry ingredients together in separate bowl for about 1 minute, and then add the sweet potato-and-egg mixture. Mix until well-blended. Then add milk and stir. add melted butter, corn syrup, and vanilla. Mix well, pour into shell and bake in a preheated oven at 375 degrees for about 45 minutes, or until set.

For pie the pie crust: Ice water 1 1/2 cups all-purpose flour 1 tsp salt 1 tsp sugar 3 tbl spoon of butter cut into cubes or 1/2 cup of shortening. Place the all dry ingredients together and add butter cubes. Place in a food processor or use your hands to mix the butter and flour until the batter has pebblt texture. Then add ice water 1 tbl spoon at a time until you have smooth pie dough. You should have enough dough for one 9-inch pie plate’s top and bottom layers
