Ingredients
Dough: 3 Tablespoons soft unsalted butter
2 Tablespoons sugar
1/4 teaspoon salt
1/2 egg, vigouously beaten (reserve other half)
2 Tablespoons cold milk
1 cup flour
Filling: 2 to 3 cooked sweet potatoes (1 cup)
1/4 cup brown sugar
1 Tablespoon soft butter
1 Tablespoon vanilla
2 Tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/2 egg from above
1/8 teaspoon allspice
1 Tablespoon heavy cream
1/8 teaspoon nutmeg
Pecan Pie Syrup: 3/4 cup sugar 2 teaspoon vanilla
3/4 cup dark corn syrup
pinches of salt and cinnamon
2 eggs
3/4 cup pecan pieces
1 1/2 Tablespoons melted butter
Preparation
For dough: Place butter and salt in bowl. Beat with mixer at high speed and add 1/2 egg and milk. Then add flour. Beat at high speed untill mixed. Place on floured surface and roll out.
Filling: Add all ingredients together and mix with mixer about 3 minutes.
Pecan Pie Syrup: Thoroughly combine with mixer until opaque in color. Stir in pecans at last. Spoon filling into crust, then syrup. Bake 325° 1 1/2 hours.
