Ingredients

2 t butter

1 lb. yams

1 onion

1/4 teas. ginger

2/3 C arborio rice

1/4 C dry Riesling

2/3 C mascarpone cheese

1/4 C walnuts

1/4 C fresh parsley

1 teas. grated orange peel

Preparation

Melt butter in large skillet over med-high heat. Add yams, onion and ginger; saute until yams are tender about 15 min. Remove from heat. Cook rice in small saucepan until just tender, but still firm, about 15 min. Drain. Add to yam mixture in skillet. Add reisling and stir over low heat. Add cheese and stir to melt.
