Ingredients
2 pounds sweet potatoes, peeled and cut into 3/4 inch pieces
2 sweet onions, peeled and cut into 1/2 inch wedges
2 mangoes, peeled and cut into 3/4 inch pieces
1/4 cup olive oil
2 tsp fresh lime juice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
pinch cayenne
Preparation
In a large bowl, combine the potatoes, onions, mangoes and pepper. Add the rest of the ingredients and toss to coat.
Place in a 13x9 inch greased pan Bake at 450 for 45 minutes covered. Uncover and roast 10-15 minutes more until caramelized.
