Ingredients
3 pounds sweet potatoes
1/2 cup brown sugar
2 eggs
1/2 cup melted butter
1 teaspoon cinnamon
1 teaspoon salt
1 cup orange juice
1 cup pecan halves
Preparation
- Peel and cook the sweet potatoes. Drain well on paper towel. Mash and add beaten eggs and 1/4 cup melted butter, salt and cinnamon.
- Beat in orange juice until potatoes are soft and fluffy (not all the orange juice).
- Transfer to baking dish, cover with pecan halves, brown sugar and the rest of the butter.
- Bake at 350 degrees for 25 minutes. Serve.
