Ingredients
3 cups mashed sweet potato
1/2 cup sugar
2 eggs
1/4 cup butter, melted
1/2 c milk
1/2 tsp salt
1 tsp vanilla
1/2 tsp ginger
Topping:
1 cup brown sugar
1/3 cup flour
1/4 cup butter melted
1/3 cup chopped pecans
Preparation
Beat sweet potato, sugar, eggs, butter, milk, salt, vanilla and ginger. Pour into greased pan.
Topping: Mix first three ingredients together, then add pecans. Sprinkle on top of the souffle mixture.
Bake 350 degrees for 30 minutes
