Ingredients
3/4 cup peeled, baked, peeled and mashed sweet potatoes (about 1/2 pound raw)
1 1/2 teaspoons melted unsalted butter
1 medium egg white, lightly beaten
3/4 cup 2% milk
1/4 cup all-purpose flour
1/2 cup whole-wheat flour
1 teaspoon baking powder
1/4 teaspoon sea salt
Preparation
- Preheat waffle iron.
- In a large bowl, combine cooled sweet potatoes, butter, egg white, and milk. Beat until blended. Add flour, baking powder and salt. Stir until smooth.
- Spray waffle iron with nonstick vegetable coating.
- Pour 3/4 cup of batter on to center of waffle iron and bake until done.
Makes 4 (1/2 waffle) servings, each containing approximately: 225 calories 47 gm. carbohydrate 3 gm. fat 3 mg. cholesterol 5 gm. protein 182 mg. sodium 5 gm. fiber
