Ingredients

3 sweet potatoes

4 cloves garlic (crushed)

1 1/2 Tbsp. olive oil

1/4 tsp. dried thyme

1/4 tsp. salt & pepper

crushed red pepper to taste

top with thinly sliced scallion (when serving)

Preparation

Grill on BBQ 20-30 min. or preheat oven to 400, on baking sheet toss sweet potatoes with the garlic, oil, thyme, salt and crushed red pepper. Roast until tender and beginning to brown, 30-45 min.
