Ingredients

1 cup microwaved mashed sweet potato

2 eggs

1/3 corn oil

1/4 coconut sugar

1/2 cup agave sugar

1 3/4 peach palm flour

1 tsp baking soda

1/2 tsp sea salt

2 tsp ground canella

3/4 tsp grated nutmeg

1/2 tsp gound cardamon

Preparation

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 8.5 x 4.5 x 2.5 inch loaf pan. In a large bowl, mix together the mashed sweet potato, eggs, oil, water and sugars until thoroughly combined. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg and cardamom. Stir the dry ingredients into the sweet potato mixture. Combine just until incorporated; do not over mix.**Optional: Stir in ½ cup of nay of the following: choped hazelnuts or chopped cashews or dried tropical fruit like guava berries. Pour into the prepared pan. Bake at 350 degrees for 60-65 minutes or until a wooden skewer inserted into the center of the loaf comes out clean
