Ingredients
6 medium sweet potatoes
1/2 cup of sugar
2 eggs
1 teaspoon vanilla
1/3 cup milk
½ cup butter
Topping:
2/3 cup packed brown sugar
2/3 cup chopped pecans
4 tablespoons flour
4 tablespoons butter
Preparation
Cook potatoes in boiling water until tender (45 to 60 minutes). Peel and mash (better to peel after cooked, but hot to touch - run some cold water on them to cool them a bit). Combine the potatoes, sugar, eggs, vanilla, milk and butter and beat with electric mixer until smooth. Spoon into lightly greased 12 x 8 x 2-inch baking dish. Combine ingredients for topping. Sprinkle over casserole and bake all at 350 for 30 minutes.
