Ingredients
4 medium sweet potatoes
1/2 tsp grated nutmeg
dash ground clove
3/4 tsp salt
1/4 cup sugar
2 tbsp butter
1 well-beaten egg
1/4 cup cream
1 tbsp grated orange rind
1/2 tsp grated lemon rind
2 tbsp light brown sugar
Preparation
Preheat the oven to 450°F.
Cook the unpeeled whole sweet potatoes in boiling water to cover for 20 to 30 minutes, until tender. Slip off the skins and mash until smooth. Add 1 tbsp butter, and remainder of ingredients except brown sugar. Beat until fluffy.
Turn the mixture into a buttered casserole. Melt 1 tbsp butter and brush on top. Sprinkle with brown sugar.
Bake in 450°F oven for 35 minutes or until brown.
