Ingredients

5 large Sweet Potatoes

1 tsp. salt

1/2 tsp. nutmeg

1/2 tsp. cinnamon

1/2 C. butter, softened

4 eggs

2 tsp. vanilla

1 C. white sugar

Topping Ingredients:

1 1/4 C. brown sugar

6 T. flour

1 C. pecans, chopped slightly

1/2 C. butter, softened

Preparation

Wash and roast at 375 degree oven for 1 hour. Cool slightly. Peel and place potatoes into a bowl. Cover and place in refrigerator until the day needed. Mix ingredients and fold into sweet potatoes. Put potatoes into a buttered casserole. Mix topping ingredients and place on top of sweet potatoes. Bake 350 degrees 35-40 min. Serves 12
