untrimed brisket - 10+ lbs.

sugar

fahita seasoning

Preparation

completely cover brisket with fahita seasoning then librally coat fat side of brisket with sugar. grill starting at 300 to 350 degrees for 1 hour. let temperature reduce to around 250 degrees and let grill for 1 more hour. then wrap complete brisket in heavy duty foil and let it cook for at least three more hours (longer would be better). remove carefully (lots of juices) and let cool for 1 or more hours. remove from foil and let drain for 10 or so minutes. slice (butter knife sometimes works)and serve how ever you like. great with german potato salad, roasted corn on the cob, grilled onions or other vegies and boracho beans. white bread optional.
