Ingredients
Swiss chard, stems removed,
coarsely chopped 6 oz Bacon strips 2 ea
Onion, medium dice 2 oz
Salt and pepper to taste
Water 1/4 cup
Preparation
Cut out the stems from each leaf and cut the leaves into two inch pieces.
Chop bacon into 1 inch pieces and cook until almost crispy. Add the onions and cook them until they are translucent. Add the greens, season and toss the leaves to begin wilting in the fat. Add the water and cover the pan to finish wilting the greens. The greens will be done when there is still a little bite left to them. Check the seasoning.
