Ingredients

4 Swordfish steaks, 2 tbsp olive oil, 1 lemon zested, Bag of mixed salad, 2 sliced beef tomatoes.

Herb dressing : 4 tbsp Fat free or L/fat Mayonnaise, 2 tsp Dijon mustard, 1 tbsp lemon juice, 1 chopped shallot, 1 crushed garlic clove, 1 tbsp each of tarragon, chives & parsley

Preparation

Put the swordfish in a bowl and cover with 2 tbsp olive oil and the lemon zest. Season with salt & pepper. Mix together all the ingredients for the herb dressing in a small bowl and set aside. Cook the swordfish on a hot bbq for 2-3 minutes each side, depending on thickness. Arrange mixed salad and tomato slices on a plate - top with swordfish steak. Add a spoonful of the herb dressing on top of each steak.
