Ingredients

1/4 cup extra virgin olive oil 3 large garlic cloves- crushed 1/2 tsp. Italian seasoning 1 each medium green, yellow squash- sliced & halved (skin left on) 1 large onion- sliced in quaters 1 each green,red,yellow pepper-cut up in chunks 1/2 stick of butter- divided in half 2 medium fresh swordfish steaks juice from 1 lemon (reserve lemon) 1 large tomato-chopped 1/2 cup torn parsley leaves salt & pepper to taste

Preparation

Preheat a gas grill on medium or in a preheated oven on 375 degrees. In a disposable tin foil pan add the extra virgin olive oil,garlic cloves and Italian seasoning. Add all the cut up vegetables and toss with the olive oil,garlic and seasoning until well coated. Place the 1/2 stick butter that is divided on top of vegetables.Lay the 2 medium swordfish steaks on top. Squeeze lemon juice on fish and place lemon in pan.Sprinkle the chopped tomato and torn parsley leaves on fish. Cover with tin foil and place on gas grill or in oven and cook for 20 minutes or until fish is opaque.
