Ingredients
1 15 oz garbanzo beans
1 15 oz red kidney beans
1 15 oz black beans
1/2 cup medium red onion, chopped medium
1/2 cup green peppers diced small
1/2 cup red or yellow peppers, diced small
1/2 teaspoon salt
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup Italian dressing
3 tablespoon flat leaf parsley, chopped fine
Preparation
Rinse beans in cold water, drain in colander,place in 5-qt.serving bowl. Mix-in all other ingredients except parsley. Let marinate in fridge 2 hrs, removing 3 times for remixing. Sprinkle with parsley. (Main course option: sprinkle with shredded cheese.) Sprinkle with parsley, serve.
