Ingredients
1 pound chicken breast
½ teaspoon salt
4-5 tablespoons flour
1 egg
2 cups oil for deep frying
¼ cup onion
2 scallions, chopped fine
4 slices fresh ginger, chopped fine
¼ cup catsup
¼ cup chicken stock
1 tablespoon sherry
2 tablespoons chili paste with garlic (use 1 tablespoon, if you prefer less spice)
Preparation
- Cut chicken into cubes diagonally. Add salt, flour. Egg the chicken and dredge through the flour mixture.
- Heat oil in Wok, deep fry chicken 1-2 minutes. Drain. Remove.
- Reheat 2 tablespoons oil in Wok, stir fry onion, scallions and ginger one minute. Add catsup, stock and sugar, Bring to a boil.
- Pour in Chicken. Add Sherry and chili paste with garlic. Stir fry briskly one minute.
