Ingredients

2 bunches parsley, stems removed

4 tomatoes, seeded & diced

4 green onions, minced

10 fresh mint leaves, minced

1 1/2 lemons

1/4 c olive oil

salt & pepper to taste

Preparation

Dice everything. Salt the tomatoes, pepper the onions, throw it all in a bowl, add dressing, stir, & season to taste. Easy & really good.
