Ingredients

1/2 cup fine-grind or medium grind bulgur

1/3 cup extra virgin olive

oil or more as needed

1/4 cup freshly squeezed lemon juice, or to taste

salt and pepper

2 cups of parsley, roughly chopped

1 cup mint leaves, roughly chopped

1/2 cup scallions, chopped

4 medium tomatoes; cored, seeded, and chopped

Preparation

  1. soak the bulgur in hot water to cover until tender, 15 to 30 minutes. Drain well, squeezing out as much water as possible. Toss with oil and lemon juice and season with pepper

  2. just before serving, add parsley, mint, scallion and tomatoes. Add seasoning, and serve.
