Ingredients

3 dl bulgur

1 large bunch flat parsley, finely chopped

15 fresh mint leaves, finely chopped

1/2 cucumber

3 tomatoes

2 red onions, finely chopped

1 lemon

4-5 tbs good olive oil

salt & pepper

Preparation

Prepare the bulgur according to the package instructions. Let cool.

Chop the tomatoes in half, scrape out the seeds with a spoon. Chop finely.

Peel the cucumber, scrape out the seeds with with a spoon. Chop finely.

Mix the cooled bulgur with the tomatoes, cucumbers, onions, parsley and mint. Squeeze the lemon juice over and mix in the olive oil.

Add salt and pepper to taste.

Best made a few hours in advance so all the flavors can come together before serving.
