Ingredients
Bulger Wheat - 1 Cup
Parsley - chopped very finely
Scallions - about 3 stalks, sliced very finely
Lemon Juice - ¼ Cup
Tomatoes - cut into pieces
Cucumber - cut into pieces
Peppers - red, green, yellow - 1/3 each - cut into pieces
Garlic Salt - dash
Olive Oil - 1/8 - ¼ Cup
Mint (optional)
Preparation
- Put 1 Cup Bulgur Wheat in a large Sauce Pan or bowl
- Add 1½ tsp of salt to the bulbur
- Pour 1½ Cups boiling water over the Bulgur
- Cover and let sit for 30 minutes
- Stir in lemon juice, olive oil, and garlic powder
- Refrigerate for 2-3 hours
- Add remaining ingredients and mix well
