Ingredients

1/2 cup bulgur

1 cup boiling water

1 cup fresh parsley, chopped

1/4 cup fresh mint leaves, chopped

4 tomatoes, diced

5 green onions, thinly sliced

2 tsp olive oil (add more to taste)

4-6 oz crumbled feta cheese

juice of one lemon

salt to taste

Preparation

  1. Place bulgur in small bowl. Mix in boiling water. Cover bowl with a plate and let sit for 1 hour. Drain excess water.

  2. Combine parsley, mint, tomatoes, onions, olive oil, feta and lemon juice. Mix in bulgur and salt to taste. Serve chilled.
