Ingredients
1 cup bulgar
6 green onions, finely chopped
1 medium onion, finely chopped
1 pound tomatoes, chopped
1 cup chopped parsley
1 cup olive oil
1/2 cup lemon juice
1/8 teaspoon cinnamon
pinch of nutmeg
salt and pepper to taste
Preparation
Pour enough water over bulgar to cover. Stir to mix well Drain. Let bulgar sit for 1 hour. (Fluff with a fork after 30 minutes).
Add green onions, onion, parsley, and tomotoes in a bowl and toss.
Combine lemon juice, oil, cinnamon and nutmeg.
Add bulgar to veggies and pour lemon/oil mixture over. Salt and pepper to taste
Refrigerate at least one hour and preferably overnight before serving
