Ingredients
1 cup bulgur
1 cup boiling water
1/4 cup olive oil
1/3 cup lemon juice (2-3 lemons)
1 teaspoon salt
1/4 teaspoon garlic powder
1/2 teaspoon dried oregano leaves
dash cayenne pepper
1/4 cup green onions. chopped
1 small bunch fresh parsely, chopped
2 large tomatoes
1 2.25 oz can black olives, chopped
Preparation
In medium bowl, pour boiling water over bulgur. Let sit for 30 minutes. Mix in a shaker the oil, lemon juice, salt, garlic powder, oregano and cayenne pepper, then shake well. Mix bulgur and vegetables, pour in dressing and stir well.
Best if refrigerated several hours before serving.
Can be doubled easily, but I don’t double the dressing.
