Ingredients
1 - 1.5 lbs Ground Beef (i recomend ground sirlion for the taste)
1/2 cup chopped onion
15 oz red kidney beans
15 oz tomato sauce
6 oz tomato paste
11 oz sweet corn
1 packet taco seasoning (hot or mild your choice)
chicken stock
2 tbs Sofrito spanish seasoning(optional)
Shredded Cheese
Tortilia chips
Preparation
Brown ground sirlion and onions. drain excess fat, add kidney beans cook 2 mins low heat. Add tomato sauce and paste, cook 2 mins. Add chicken stock to desired soup thickness and bring to a boil, reduce and simmer. Add corn and sofrito. let mixture sit for 5 mins to rest. Serve in bowls and top off with crushed chips and cheese.
