Ingredients

1 pound pork butt, ask butcher to slice it thin

(Marinade) 2 TSP each: taco seasoning, chili powder, paprika, vinegar, pinapple juice; 1 TSP each: garlic powder, salt

(Relish) 2 cup chopped cilantro, 1/2 cup diced onion

lime juice and crushed pinapple

Preparation

  1. Mix up marinade, brush one side of pork slice with marinade. Stack slice on top of another. Leave for 1-2 hours

  2. Heat pan to med-high. Grill each slice to well done on both sides, then stack pork on to of eachother.

  3. Chopped the stack virtically to render thin slices. Serve on small tortillas with relish. Garnish with pinapple and lime juice.
