Ingredients

Minced beef/ lamb

1 red onion - finely sliced

2 eggs

2 garlic cloves - finely sliced

2 large tomatoes - skinned and finely sliced

Olive oil

Cumin

Paprika

Salt/ Black peper

Powdered Ginger

Parsley

A few slices of red or green pepper to garnish

Preparation

1.) Place the onion, tomatoes, garlic and olive oil into the tagine pot and cook over a lowish heat. Add all the spices and leave for about 10 mins with the lid on.

2.) Add the minced meat balls and cook for about 3-5 minutes until cooked. Stir in the eggs and add the peppers to garnish.
