Ingredients

Chicken Drumsticks-I usually do 30 pounds at a time. Bought at Sam’s Club.

Brine:

14 Qts. of Water.

2 cups of Koscher Salt

2 cups lemon juice, from concentrate.

1/4 cup Pepper

1/4 cup Garlic Powder

1 cup olive oil.

Brine in a 10 gallon ziplock bag on ice in a cooler for 24 hours.

Drain, coat with Tony’s, to taste. Grill until brown. Put in foil pan, cover with foil, put in covered grill, or oven at 250-300 degrees for an hour.

Preparation

Wash chicken legs, then brine for 24 hours. Make sure you keep the chicken cold. Use appropriate precautions with chicken.
