Ingredients

Crumbled Tofu (or you can use ground beef)

2 cans Seasoned Black Beans

1 can petite diced tomotoes, preferably fire roasted.

1 Tbls olive oil, 2 cloves minced garlic, 1 large onion-chopped, 1 green pepper- chopped,jalapenos-to your taste, 1/2 cup fresh chopped cilantro, 1 tbls cumin, 1 tbls chipotle chili powder, 1/2 tsp salt, 2 fresh chopped tomatoes or use fresh salsa, Choose your cheese: Velveeta/ cream cheese with mexican shredded/white queso

Preparation

Saute Garlic in Olive oil. Add onions and peppers. Add 1 package of crumbled Tofu. Cook for 5 minutes, Add canned tomatoes, Add spices… 1 tbls cumin, 1 tbls chipotle chili powder. 1/2 tsp salt. Add 2 cans black beans and lower heat to medium low and simmer so flavors can blend. Melt in the cheese of your choice… 1/2 block of Velveeta or 1 block of white queso with 1 cup of mexican shredded cheese. At the end, mix in fresh tomotatoes or fresh salsa and chopped fresh cilantro. Make ahead with all but cheese and fresh ingredients. Bake in oven to heat and melt cheese, add fresh ingredients last. Serve with cucumbers and chips!
