Ingredients

1/2# butter

1 cup ap flour

4 cups heavy whipping cream

1/2 tsp salt

1 tsp pepper

2 cups shredded parmesn cheese

2 cups shredded cheddar cheese

2 cups shredded monteray jack cheese

2-24oz. cans artichoke hearts

1 large red onion

4 cups mayonaise

4 lemons

48oz. frozen chopped spinach

Preparation

make roux: in a small pan, melt butter, then add flour and stir well. let bubble for 1 minute.set aside. heat heavy cream in pot. once hot, add all cheese. bring to a boil. let simmer for 2-3 minutes. add roux to thicken.take off heat. in a mixing bowl, add thawed spinach, chopped artichoke hearts,diced red onions,juice from lemons, mayonaise,salt & pepper and mix well. add cheese sauce and mix well again. scoop out mixture into oven proof dishes (cereal bowl size). put in 400 degree oven for 4-6 minutes until golden brown and bubbling. serve with tortilla chips, crostinis, celery&carrots, or what ever you choose.
