Ingredients

1 lb. talapia ( 6 small fillets)

1/4 cup pesto sauce, brushed on fillets

3 plum tomatoes, diced finely

1/2 cup red onion

2-4 cloves garlic, minced

1 Tblsp. white wine vinegar

1 tsp. lemon zest

1/2 tsp oregano, dried

1/4 tsp salt and pepper

pinch of sugar

topping: 1/2 cup freshly grated parmesan cheese

Preparation

Mix well and pile on top of the fish fillets, that have been brushed with the pesto sauce. Sprinkle with 1 Tblsp freshly grated parmesan, each. Bake at 350 for 10 minutes, till fish flakes with fork. Serve on a bed of rice.
